Ian Whitney,Culinary Team Member This month, we'd like you to meet a member of elite culinary team, Ian Whitney! As Polo Grill/Fête Sous Chef, Ian is responsible for overseeing the daily food operations. His culinary career started in Portland, Oregon where he was a sous chef and a manager of a wholesale seafood distribution company. Soon after getting his first taste of working in a kitchen, Ian knew that his passion was in the hospitality industry. His migration down south to the beautiful, warm weather of the Sunshine State brought Ian to the Polo/Fête family in 2010. He is absolutely loving it and is proud to be part of such an interesting and fun community. Chef Ian's favorite dish? The Polo Grill 4 Hour Braised Short Rib. "Who can resist the roasted vegetables, red wine and shallot puree?!" We have found an incredible asset to our family in Ian, and lucky for us his favorite part of the job is the people he works with. If you are joining us for lunch or dinner, in our home or yours, please don't hesitate to say hello to Chef Ian. When he is not cooking up something delicious at the Polo Grill, Ian is a radio DJ at 96.5 WSLR (tune in Monday nights from 9 to 11 PM!), loves painting (he requested one of his masterpieces replace his employee photo above), and soaking up the beautiful Florida sunshine!

Recipe of the Month
 Chocolate Creme Brûlée with Caramelized Banana 6 servings 1 quart heavy cream 1 cup sugar, plus more for dusting 1-ounce chocolate liqueur (recommended: Godiva Liqueur) 1/2 tablespoon vanilla extract 2 ounces cocoa powder 1-ounce unsweetened chocolate 11 large egg yolks Preheat the oven to 350 degrees F. In a medium sized saucepan over medium-high heat, combine the heavy cream, sugar, liqueur, and vanilla. When the mixture is warm add the cocoa powder and chocolate and whisk until blended. Place the egg yolks in a large stainless steel bowl. Slowly add the warm chocolate mixture to the eggs, a little at a time, while whisking. Strain and pour into individual porcelain ramekins. Place the ramekins in a large baking pan. Pour enough hot water into the pan to come half way up the sides of the ramekins. Bake until firm in the center, about 30 minutes. Remove the ramekins from the water bath and let cool completely. Place in the refrigerator for 2 hours. Dust with sugar and caramelize with a propane torch. Caramelized Bananas: 1 cup sugar 1/4 cup water 3/4 cup cream 2 bananas; cut into batons Caramelized Bananas: Cook sugar and water over high heat until well caramelized. Turn off the heat and add cream. Stir until well mixed; it should be boiling. Add bananas and toss lightly in syrup. Strain and reserve liquid. Place bananas around crème brûlée and finish with reserved liquid. Serve immediately.

While the event will take place in the main lobby, the hospital will offer tours of the newly dedicated Orthopedic Spine and Joint Center housed on the third floor. The hospital has embraced the Marshall Steele Program of Orthopedic Excellence turning our community hospital into a Destination Center for Orthopedic Care. The program aims to have patient dressed in their own clothes the day after surgery- participating in group rehabilitation programs that include putt putt golf! His book shares the tale of Pike's rise to fame, as well as the obstacles he overcame as a Jew in the sport in the 1800s.
