4th of JulyRecipe for a special menu item, Lynn's Salad
While PGB Proprietor, Jaymie Klauber, lived on Longboat Key, she had to make the long drive to the Lakewood Ranch polo grounds everyday to feed and exercise her horses.  On her way back home, tired and hungry, she would stop by her Dad and Step-Mom's home, since it was about half-way between the polo grounds and her LBK home.  Lynn, her Step-Mom, always the gracious hostess, would make her the most awesome salads for lunch that had a little bit of everything in it.  Lynn always said, "It's got everything but the kitchen sink!"

You will need:
3 oz mixed field greens
½ oz roasted corn kernels
½ oz dried cranberries
½ oz sunflower seeds
½ oz grape tomatoes (sliced in half)
½ oz cucumber (cut in half length-wise, cored and cut on bias)
½ oz shredded fresh mozzarella
4 cups balsamic vinegar
Minced red onion
Dijon mustard
Firmly packed brown sugar
Salt
Pepper
Chopped fresh basil
Blended oil

Balsamic Vinaigrette
Makes 3 quarts - reserve, cover and refrigerate up to 2 weeks.
With a burr mixer, place balsamic vinegar, onion, mustard, brown sugar, salt and pepper.  Mix until thoroughly combined and smooth.  With the mixer still running, add the oil at a steady stream.  Last, add the basil.

Assembly:
Lynn's Salad
Add the 1.5 oz of vinaigrette to the mixed field greens and toss together until well incorporated.
Place the tossed field greens in the center, ½ oz at a time to create height in a chilled salad bowl.
On the outside of the salad bowl place the rest of the ingredients (separated) around the field greens.
Serve Immediately.
Enjoy!

Meet PGB's Director of Catering and4th of July Banquet Operations, Shannon Harper

Shannon began working for the Klaubers at Pattigeorge's in 2002, where she shined as a server, then manager, while attending college locally. When Fête Boutique Catering was started, Shannon was a natural working the off-site catered events, and she quickly became a Captain. Jaymie identified that special something in Shannon and when Fête catering moved to the Polo Grill, she was determined to bring Shannon's great leadership abilities, experience, people-skills and work-ethic with her. Shannon started in November as the Director of Catering and Banquet Operations, planning and executing Fête events. After only a few weeks on the job, Shannon began to take on the sales of the on-site events as well as the operations. In only 6 months, with her exceptional event planning and execution abilities, and a flair for customer relations, Shannon has successfully produced hundreds of small to very large events, to the ultimate delight of a multitude of beyond satisfied clients and their guests - and she has the drawer full of thank you notes and testimonials to back it!  We are thrilled to have Shannon as an "eventour" on the Fête team.
